In the Mood for a Savory Feast

Treat yourself to the delectable cuisine at Marquis Los Cabos Beach, Golf, Spa and Casitas Resort, with thumbs up coming from as far away as France. The hotel has received the Distinctive H award for high standards in food management, and one of its restaurants, the 20-seat Canto del Mar, has been awarded the Five Star Diamond by the American Academy of Hospitality Sciences for three consecutive years. Moreover, Chef Thierry Dufour, who comes from a solid line of culinary experts, has been named Master Chef of France for his lifelong commitment to the promotion of French cuisine.


It was another Master Chef, Serge Courvile, who taught Dufour and added passion to his calling. Dufour has spent seven years in Los Cabos after a stint in Cancun; by virtue of his chosen location, rich in fresh ingredients and native staples, he specializes in seafood and fish dishes. Dufour applauds his work team, which he says has helped him deliver the high standards that patrons expect of this award-winning resort. And although he doesn't have a particular favorite dish within the restaurants of the Marquis Los Cabos, he loves to work with high quality fresh produce to create gourmet dishes.

"The type of client here is a connoisseur of good dining and is demanding," says Dufour. His greatest triumph has been to become Executive Chef of the Marquis Los Cabos, which he considers to be one of the best resorts in the world, although now being a Master Chef is also a source of great pride. "Being part of Maîtres Cuisiniers de France means that I am a part of a renowned chefs association in France that has rewarded me for my dedication, quality and respect for the profession," he explains. "Also, I now have the great honor of being able to continue educating and teaching other chefs [about] our cultures and culinary traditions in modernity for the good of everyone else."

What does Dufour love most about Los Cabos? "The mix of desert, golf and ocean, which gives it exceptional charisma and uniqueness; the perfect climate, without humidity; the people with whom I share my day-to-day, both in the professional and the personal; and the quality of life, which is safe and peaceful. This is still considered a small town, and it makes me feel like I can know everyone…"
